Chili cooking all night. Didn't sleep a wink

If you don't mind smelling food cooking all night, putting a chili in the oven the before you go to bed makes the most tender wonderful tasting chili. My 16 year old put three pounds of meat (pork/beef/lamb) browned with an onion in a dutch oven with 16 oz of salsa, 30 corn chips, a can of tomato paste, one pepper plus 1 tbs of peppers in adobo sauce and a beer. Mix it up, cover and cook at 250 all night so your mother can't sleep for smelling it and all day so she isn't so mad at you when it comes out so yummy.

The corn chips act as a thickener. You can't even tell that they are there by the time it is done. Sort of like corn starch or flour.

I actually tried this one. I started cooking it last evening and it smelled delicious but with that smell going all night it gave my husband the serious munchies! The beer adds a fantastic flavor. It came out great!
